linguine and clam sauce

nothing exciting or fancy here for dinner tonight — i always keep some cans of chopped/mince clams on hand for this super quick and easy meal.

 

 

1/4  cup butter

1/4 cup extra virgin olive oil

4 BIG cloves of garlic crushed

2 cans of clams

splash of lemon juice

parmesan cheese (optional)

box of linguine ( i used whole wheat)

 

cook linguine.  while thats cooking heat up olive oil and butter in a big pan until butter melts and oil is heated through.  add garlic but dont burn it!  add liquid from clams and heat through.  add clams and heat through.  add a splash of fresh lemon juice and season with s&p.  when linguine is done add it to the pan and mix with the clam mixture.  done 🙂
