apple squares / cake

this is a favorite in the house – it never lasts long and for some reason never comes out exactly the same!  I always double the recipe to fit a 13×9 pan.  i never put the nuts in cause i dont like nuts in my deserts.  doubling the recipe i bake it for about 45 minutes.    I also meant to drizzle some caramel over the top but forgot!  theres always next time! YUM



apple squares

1 cup flour
1 tsp. baking powder
1/4 tsp. salt
1/2 tsp. cinnamon
3/4 stick butter (6 tbsps)
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1 tsp vanilla
1 cup apples, peeled and chopped (at least – the more apples, the better)
1/2 cup walnuts, chopped (optional)
Preheat oven to 350 degrees.
Combine dry ingredients (flour, baking powder, salt and cinnamon). In a separate bowl, melt butter – beat in sugars til smooth. Mix in egg and vanilla. Add dry ingredients to mixture, then stir in apples and walnuts.
Spread in a greased 8×8 inch pan and sprinkle top with cinnamon sugar (that’s cinnamon and white sugar mixed together). Bake at 350 degrees for approximately 30 minutes until golden brown.
(Note: We usually double or even triple the recipe and bake in a 13×9 pan, just up the baking time about 10-15 minutes. Also, you can substitute blueberries for the apples. It always comes out good!
