three-chip baked chicken with cranberry sauce, spinach, & onion rings

i really outdid myself tonight!!  this was all delicious!!!!  seriously you guys must make this chicken!  i had bought some new tri-color potato chips at tj’s last week.  we don’t normally keep chips in the house but these looked good and i was hungry so i grabbed a bag.  they were good but they could have been saltier!  i served the chicken with some sauteed spinach with garlic and alexia onion rings.  the only modifications i made were to  double the garlic and ginger in the cranberry sauce.
