SAVORY APPLE,CHICKEN, BLUE CHEESE PIE

I had a rotisserie chicken from costco — and I was going to make something mexican — enchiladas, taquitos, etc…  i figured i’d try something new!   this recipe came from pinterest — apples, onions, blue cheese and chicken in a pie???   sounded good!  it turned out pretty good – not sure if i’ll make it again though…  a little bland for me think the apples got overpowered  🙂  but the husband seemed to enjoy it…

 

SAVORY APPLE,CHICKEN, BLUE CHEESE PIE

3 apples (I used granny smith), sliced thin
2 chicken breast roasted, skin, bone removed & shredded
1 medium onion, sliced thin
1 tsp dried sage
4 oz. blue cheese, crumbled
2 Tbsp. olive oil
salt & pepper to taste

2 pie crusts (i used pillsbury)

1 egg for egg wash

Preheat oven to 425F degrees with rack in middle.
Put 1 tablespoon of olive in a large hot pan. Sweat the onions until translucent. Add Shredded chicken, salt, pepper & sage. Cook for another 5 minutes & set aside.

Assemble:

Layer 1/2 the apples in the bottom of a prepared pastry crust & sprinkle with 1/3 of the blue cheese. Next put the chicken mixture & sprinkle with another 1/3 of the cheese. Lastly layer the other 1/2 of the apples on top of the chicken & sprinkle with the last 1/3 of cheese. Place the top crust on the filling. Make 4 slices for air. With a pastry brush, brush the top of the pie with egg wash. Sprinkle the pie with course salt & freshly ground pepper.
Bake for about 40 minutes or until golden.
