Carne Guisada – crockpot

this recipe had great reviews and i’m always looking for good beef crockpot recipes!   the original recipe was cooked in a dutch oven, but i didnt have time for that today!  so i threw everything in the crockpot!    the original recipe also called for potatoes to be thrown in the last 20 minutes and i didn’t know how that would turn out in the crock… so i made mashed potatoes instead… boiled some potatoes – threw in the rest of the goat cheese i had left from the pizza yesterday, some milk, some butter.. YUM  the beef itself was very tender – but it could have used more flavor — maybe more seasoning? more cilantro??? hmmmm



Carne Guisada

  • 1 cup scallions, chopped
  • 4 cloves garlic, minced
  • 1 can diced fire-roasted tomatoes
  • 4 tbsp cilantro, minced
  • 2-2.5 lb choice round beef stew, cut into small chunks
  • 2/3 cup beef broth
  • 1 tsp cumin
  • 1/2 tsp adobo
  • 1 tsp  sazon
  • 1 bay leaf
  • salt to taste


In a large crockpot add beef.   top with scallions and garlic; add tomatoes, beef broth, cilantro, pinch of salt, cumin, sazon, and bay leaf.  cook on high 4 hours or low on 8.
