Java Rolo Banana Bread

once again the bananas were going way too brown and mushy!   this recipe came out DELICIOUS — i didnt have 2 cups worth of rolos but it was still good!  next time i’ll definitely add more

 

 

 

 

Java Rolo Banana Bread

For the Bread

  • 1/2 c. butter, softened
  • 1 c. sugar
  • 1 tsp. vanilla
  • 2 eggs
  • 1 1/2 c. flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 c. mashed banana (about 3)
  • 1/2 c. sour cream
  • 2 c. chopped rolos

For the Glaze

  • 2 Tbsp. hot water
  • 1 Tbsp. instant espresso
  • 3/4 c. powdered sugar

Instructions

For the BreadBeat the butter and sugar until creamy. Add the eggs and vanilla and beat again. Stir in the baking soda and salt. Slowly add the flour to the mixture while the mixer is running. Do not over beat.

Fold in the bananas, sour cream and rolos by hand until incorporated. Pour into a 9×5 pan that has been sprayed with non stick spray. Bake at 350* for 1 hour and 5 minutes. Check with a sharp knife or toothpick to see if it is done…if not, bake another 5 minutes. Let cool for 10-15 minutes in the pan, then remove and cool the rest of the way on a wire rack.

For the GlazeDissolve the espresso in the hot water. Stir in the powdered sugar until smooth.

After the bread has cooled all the way, spread coffee glaze on top and let set before cutting slices.
