It was one of those nights I had ground turkey out and no plans for it! I took a look at skinnytaste for some ideas. I came across the nachos and thought why not? Can’t remember the last time I had nachos! Husband thought it was a fabulous idea! The recipe called for black bean dip which I had none of. So I found a recipe! These were pretty good definitely needed tomatoes though which we had none of!
Loaded Nachos with Turkey, Beans and Cheese
baked tortilla chips (enough to cover bottom of cookie sheet)
1 package ground turkey breast
4 tsp cumin
4 tsp garlic powder
salt and pepper
spicy black bean dip (recipe below)
Shredded Mexican blend cheese
light sour cream
Preheat oven to 425°. Place chips on large baking sheet.
Heat a large nonstick sauté pan over high heat. Add turkey. Season with cumin, garlic powder, salt and pepper and sauté until cooked through, breaking up meat into small pieces with a wooden spoon. When cooked, add bean dip and mix well.
Spoon the turkey mixture over the chips and sprinkle the cheese on top. Bake until cheese melts, about 6 minutes.
Remove the nachos from the oven, top with sour cream, cilantro and jalepeños. Serve immediately.
black bean dip

1 can black beans, rinsed
1/2 cup prepared salsa
2 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro
1/4 teaspoon ground cumin
Salt & freshly ground pepper, to taste
Combine black beans, salsa, lime juice, cilantro and cumin in a food processor. Process until smooth. Season with salt and pepper.
