Quinoa, Roasted Eggplant and Apple Salad with Cumin Vinaigrette

Got an eggplant in our veggie box and couldn’t decide what to do with it….  I came across this recipe on Pinterest and we were pleasantly surprised.  It was delicious!





Quinoa, Roasted Eggplant and Apple Salad with Cumin Vinaigrette

Adapted from Foodnetwork

Ingredients
Vinaigrette:

2 teaspoons cumin

1/4 cup extra-virgin olive oil

2 1/2 tablespoons apple cider vinegar

1/2 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1/8 teaspoon ground cinnamon

1 large shallot, finely chopped (about 1/2 cup)

Salad:

One 14.5-ounce can chicken  broth

1 1/4 cups quinoa

Nonstick vegetable oil spray

One 1 1/4-pound eggplant, unpeeled, cut into 1/2-inch cubes

3 tablespoons extra-virgin olive oil

1/4 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1 large Honey Crisp or Golden Delicious apple, unpeeled,cored, quartered

3/4 cup walnut pieces, toasted

 1/4 cup roasted saltedsunflower seeds

1/2 cup dried cranberries

 Directions


For the vinaigrette:   Whisk the oil, vinegar, salt, pepper, cinnamon, and cumin until thick and blended in a small bowl. Stir in the shallots. Set the vinaigrette aside.
For the salad: Place an oven rack in the center of the oven and preheat to 400 degrees F.

Bring the broth to a simmer over medium-high heat in a heavy medium saucepan. Mix in the quinoa. Reduce the heat to medium-low. Cover and simmer until the water is absorbed and the quinoa is tender, about 15 minutes. Turn off the heat and let the quinoa stand, covered, 5 to 10 minutes. Cool and fluff with a fork.

Meanwhile, spray a large rimmed baking sheet with vegetable oil spray. Toss the eggplant with 3 tablespoons oil, 1/4 teaspoon salt, and the pepper on the sheet. Roast until tender and browned, stirring once, about 30 minutes.

Transfer the quinoa to a large bowl; fluff with a fork. Add the vinaigrette, eggplant, apples, walnuts, sunflower seeds, and cranberries. Toss to blend.

this is how far behind i am in posting!  this was a recipe from thanksgiving!    so yummy!   apples and caramel with a glaze on top!

Ingredients

 1 cup butter, softened
1 cup brown sugar
1/4 cup oil
2 teaspoons vanilla extract
2 eggs
1/4 cup applesauce
3 cups flour
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon baking soda
1 teaspoon salt
3 cups diced apples
1 cup caramel baking bits
1 cup powdered sugar
4-5 tsp apple cider

Instructions

  1. In a mixing bowl, beat the butter, oil, and sugar until light and fluffy. Add the vanilla, eggs, and applesauce and beat again. Sift together the flour, cinnamon, nutmeg, baking soda, and salt. Add to the butter mixture until mixed in. Stir in the apples and caramel bits by hand.
  2. Spread the batter in a 12 inch bundt pan that has been sprayed with non stick baking spray. Bake at 350* for 55-60 minutes. Let cool in the pan for 10 minutes and then flip out onto a plate or tray. Cool completely.
  3. Stir together the powdered sugar and water/cider. Spoon over the top of the cooled cake.

chunky apple snickerdoodle bars

mother in law came for a visit early in november and i made these for dessert one night!  super easy and super delicious.. they didn’t last more than 24 hours!

Chunky Apple Snickerdoodle Bars

Ingredients
  • ¼ cup butter, melted
  • 1 cup light brown sugar
  • 1 egg
  • 1 tsp vanilla
  • ½ tsp salt
  • 1 tsp baking powder
  • 1 cup flour
  • 1 cup diced apples
  • 2 Tbsp granulated sugar
  • 1½ tsp cinnamon
Instructions
  1. Preheat oven to 350°
  2. Line an 8×8 pan with foil and spray lightly with cooking spray.
  3. In a large bowl combine melted butter and brown sugar with a wooden spoon. Once mixed, stir in egg and vanilla until smooth. Stir in salt, baking powder and flour until dough forms (it will be thick).
  4. Stir in apples and spread into pan.
  5. Combine granulated sugar and cinnamon and sprinkle on top of batter.
  6. Bake for 25-30 minutes until the edges are just golden and the center is almost set.
  7. Allow to cool completely before cutting into squares.

Cranberry-Apple Pork Roast

this came out a little too sweet with both apples and cranberries, but it was still good – served it over rice…

Cranberry-Apple Pork Roast
adapted from parents magazine

Ingredients
1 14 ounce can whole-berry cranberry sauce
1 1/2 teaspoons grated orange zest
1/4 cup orange juice
1/3 cup shallots
1 tablespoon cider vinegar
1 inch section of fresh ginger, peeled and grated
1 teaspoon Dijon mustard
2 pounds bonelesss pork loin roast, trimmed and patted dry
Salt and pepper to taste
2 tart apples, peeled, cored, and cut into 1-inch pieces

Make It
1. Stir together the first seven ingredients in the slow cooker.

2. Season the pork roast all over with salt and pepper and place it in the slow cooker. Spoon some of the sauce over the roast.

3. Cover and cook on low for 6 to 8 hours, or until the pork is fork-tender. Add the apples during the last hour of cooking.

This recipe popped up a couple weeks ago and I happened of have chicken defrosting. So I gave it a whirl. It came out good nothing spectacular.

Ingredients:
2 tablespoons canola or vegetable oil, divided
1 medium Granny Smith Apple, cored and sliced
1 tablespoon brown sugar
Four chicken breasts
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon pepper
1 medium yellow onion, thinly sliced
1/2 cup apple cider (no sugar added)
1/4 cup cider vinegar
hot cooked couscous

Directions:
1. in a large nonstick skillet over medium heat, heat 1 tablespoon of the oil. Saute the apple until lightly browned, about 5 minutes. Sprinkle with brown sugar and cook and additional 3 to 5 minutes, just until tender. Remove apples from the pan to a bowl.

2. Place the chicken on a plate and sprinkle with cinnamon, salt and pepper (on one side is fine). Heat the remaining tablespoon of oil and cook the chicken 4 to 5 minutes on each side, just until browned. Remove the chicken from the pan and onto a plate.

3. Add the onion to the pan and cook (covered) over medium heat 6 to 8 minutes, or until very tender (stir once in a while). Add the cider and vinegar, then reduce heat and simmer 2 minutes. Return the chicken to the skillet and continue to simmer until the chicken is cooked through and the liquid is slightly reduced- 4 to 5 minutes.

4. Return the apples to the skillet and heat through. For each serving, place couscous on a plate and top with one piece of chicken and 1/4 cup sauce.

Cinnamon apple pie cake

Time for thanksgiving dessert number two! Everyone gobbled this one up. Everyone seemed to like it. I on the other hand wasn’t thrilled with it! It was too mushy and custardy for me! I was trying to remember what dessert number three was and finally did.. salted caramel pecan pie. I think it came out yummiest the first time I made it but still yummy!

cinnamon- apple pie cake

Ingredients:
6 to 8 Granny Smith apples, peeled and sliced
1 1/2 tablespoons cinnamon- sugar (1 1/4 T. sugar + 1/4 t. cinnamon)
3 large eggs
1 1/2 cups superfine white sugar (see *Tips below)
1 1/2 cups vegetable or canola oil
3 teaspoons vanilla extract
1 1/2 cups All-Purpose Flour
more cinnamon-sugar to sprinkle on top (same as above)

Directions:
1. Preheat the oven to 350 degrees F. Spray a 9 1/2 to 10-inch springform pan with nonstick spray. Line the bottom with a round of parchment paper and then spray again.

2. Layer the apple slices in the pan until they come about 2/3 of the way up the side. (I went a little higher than that and it worked out fine). Sprinkle the cinnamon-sugar over the apples.

3. Prepare the batter by beating the eggs and sugar until light and fluffy. Add the oil and the vanilla and beat well, then stir in the flour. Pour the batter on top of the apples, and sprinkle with additional cinnamon-sugar. Tap the pan on the counter a few times to allow the batter to sink down and around the apples.

4. Bake for 1 hour and 20 minutes, or until a skewer inserted into the center of the cake comes out clean. Cool *completely* in the pan. If you try to remove the cake from the pan while it is still warm, it will tend to break apart. refrigerate cake before slicing.

Tips:
*You want “caster sugar” for this recipe: It is a finer grind than table sugar, but not as fine as powdered. Look for “Baker’s Sugar” at the store, or simply put regular white sugar in your food processor and give it a few whirls to create superfine sugar.

Caramel apple bundt cake

We did our annual fall apple picking and then got more apples in our fresh box! What to do besides eat them? Bake them! This was really good! Needed more caramel though:). Can never have enough caramel 🙂

Spread the batter in a 10 inch bundt pan that has been sprayed with non stick baking spray. Bake at 350* for 55-60 minutes. Let cool in the pan for 10 minutes and then flip out onto a plate or tray. Cool completely.

Stir together the powdered sugar and water/cider. Spoon over the top of the cooled cake.

Apple pie bread

Apple pie bread. Need I say more? This was delicious. The original recipe called for shredding the apples. I chopped them instead.

Apple Pie Bread
adapted from cookies & cups

ingredients
1/2 cup butter, softened
1 cup sugar
1/4 cup buttermilk
2 teaspoons baking powder
2 eggs
1 teaspoon vanilla
2 cups all-purpose flour
1/2 teaspoon salt
2 cups chopped, peeled apple (about 4 medium)
1 cup chopped walnuts or pecans
1/2 cup raisins
1 Recipe Streusel-Nut Topping

directions
1. Preheat oven to 350 degrees F. Grease the bottom and 1/2 inch up the sides of an 9x5x3-inch loaf pan; set aside.
2. In a large bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Beat in sugar until combined. Add buttermilk and baking powder; beat until combined. Add eggs and vanilla; beat until combined. Add flour and salt; beat until combined. Stir in apple, nuts, and raisins.
3. Spoon batter into prepared pan; spread evenly. Sprinkle Streusel-Nut Topping over batter. Bake for 60 to 65 minutes or until a wooden toothpick inserted near the center comes out clean.
4. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on wire rack.

Streusel-Nut Topping

ingredients
1/4 cup packed brown sugar
3 tablespoons all-purpose flour
2 tablespoons butter
1/3 cup chopped walnuts or pecans

directions
1. In a small bowl, combine brown sugar and flour. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in walnuts or pecans.

glaze
1/4 cup of Biscoff spread
3 Tbsp of milk
1 cup of powdered sugar.
healthy pinch of cinnamon
Mix that until it’s smooth and drizzle that all over the top…

Caramel Apple Brownies

Wow these are delicious!! Go make them yum! Caramel and apples in a blondie type dessert. Yum yum yum

Caramel Apple Brownies

Ingredients
1 cup softened butter
2 cups sugar
2 eggs
2 cups flour
1 t baking powder
2 t cinnamon
2 Granny Smith apples, chopped and peeled
1 cup caramel bits
cinnamon sugar

Instructions
Preheat oven to 350. Spray a 9×13 pan with non stick spray and set aside. In a stand mixer, combine butter and sugar and mix until creamy. Add eggs one at a time until each is well mixed. Add in flour, baking powder and cinnamon. Add in chopped apples until blended. Batter will be thick.
Pour batter into prepared pan. Sprinkle caramel bits over batter and press in slightly. Bake for 45 minutes until lightly browned. Remove from oven and sprinkle with cinnamon sugar.
