chicken chili

i found this recipe on pinterest…. do i follow 21-day fix or any other of those diets or drink shakes… no i do not.. the recipe looked good and easy.. so i made it 🙂 and it turned out good! really good! served it with some garlic toast. even forgot the cilantro…


chicken chili
adapted from supernovamom

1 tsp olive oil
2 lbs ground chicken
1 medium onion, chopped
1 medium green (or red) bell pepper, chopped
3 cloves garlic, finely chopped
1.5 tsp ground cumin
1 tbsp chili powder
1/2 tsp sea salt or Himalayan salt
1/4 tsp cayenne pepper
2 (15 oz) cans black beans, drained, rinsed
1 (15 oz) can diced tomatoes
12 fresh cilantro sprigs, finely chopped (for garnish, optional)

Heat oil in large saucepan over medium-high heat
Add chicken, onion, bell pepper, and garlic; cook, stirring occassionally, for 5-8 mins, or until chicken is no longer pink.
Add cumin, chili powder, salt, and cayenne pepper; cook, stirring constantly, for 1 minute.
Add beans and tomatoes (w/ liquid). Bring to a boil. Reduce heat to low, gently boil, stirring occasionally, for 15-20 minutes, or until thickened.
Serve warm, sprinkled with cilatro.

Turkey chili with kale

Kale showed up in our fresh box a few weeks ago (yes, I’m very behind in posting) we hadn’t had chili in awhile so I decided to try this recipe! Glad I did it was delicious! Yum!



Turkey Chili with Kale
adapted from the kitchn

Olive oil
1 1/3 pounds ground turkey
1 medium onion, diced
3 cloves garlic, minced
2 tablespoons brown sugar
1 tablespoon chili powder
1 1/2 tablespoons cumin
2 teaspoons dried oregano
2 teaspoons salt
1 teaspoon pepper
2 tablespoons tomato paste
2 14.5-ounce cans diced tomatoes
1 15-ounce can black beans, rinsed and drained
1 cup frozen corn kernels
1 1/4 cups chicken broth
1 small bunch kale, tough stems removed and roughly chopped

Heat a splash of olive oil in a large stock pot or Dutch oven over medium high heat. Add the turkey, season with salt and pepper, and cook, breaking apart into crumbles with a wooden spoon, until cooked through, about 6 to 8 minutes. Remove meat with a slotted spoon and set aside.

If you want to pour off some of the remaining fat, you can. But leave enough to coat the bottom of the pot. Reduce the heat slightly and add the onions and garlic, season with salt and pepper, and cook for about 5 minutes, until softened. (If you use a green pepper, add it here with the onion.) While the onions and garlic are cooking, combine the brown sugar, chili powder, cumin, oregano, salt, and pepper in a small bowl, mixing with a fork.

Add the spice mixture and tomato paste to the onions and garlic. Cook for about a minute, stirring to combine the paste with the spices. Add the tomatoes and stir, picking up any brown bits from the bottom of the pot.

Raise the heat to medium and add the meat, beans, corn, and chicken broth to the pot. Bring the mixture to a simmer, then lower the heat, cover, and cook for 20 minutes. Add the kale and continue cooking, covered, for about 15 more minutes.

Crockpot chili

We hadn’t had chili in a long time and it sounded good so I found a recipe on Pinterest. I don’t have chili powder so I substituted cayenne and cumin so this came out super spicy. It was good otherwise! Served it with tjs corn bread yum!

2 lb ground beef
1 small onion chopped
1 green bell pepper chopped
1 garlic clove crushed
1 1/2 cans diced tomatoes, undrained
2 (8oz) cans tomato sauce
3 oz tomato paste
1/8 cup chili powder
1/2 T sugar
1/4 t paprika
1/2 t ground pepper flakes
1 bay leaf
1 can red kidney beans drained and rinsed
S & P to taste

1. In large skillet brown beef, drain and place in slow cooker
2. Add in rest of ingredients and stir
3. Cover and cook on high 5-6 hours or low 7-8 hours

Top with cheddar cheese, green onions, red onions, sour cream

Oven pork chili

Pork chili in the oven? Sounded interesting! I tried it, nothing remarkable! The tjs corn bread I served it with was delicious though!


Oven Pork Chili

2 tablespoons oil
3 lb pork roast, fat trimmed and cut into ½ inch cubes
2 cloves garlic
1 onion, diced
1 green pepper, finely chopped
1 tablespoon chili powder
1 ½ teaspoons dried oregano
¾ teaspoon ground cumin
¾ teaspoon salt
3- 14 ounce cans diced tomatoes
2- 8 ounce cans tomato sauce
2 – 15 ounce cans kidney beans, rinsed and drained

In an oven proof pan heat oil. Add onions and green pepper and cook until tender.
Add cubed pork and brown pork on all sides.
Add remaining ingredients and stir.
Cover and bake at 350 degrees for 2 ½ -3 hours or until the meat is tender.
Serve with a little shredded cheese and enjoy!

21 ingredient slow-cooker chili

some crockpot meals are a hit – but more often than not they’re a miss — this one was a miss for me – although the husband liked it!  i found it a little too spicy (if there is such a thing!)  and the other flavors weren’t strong enough to compensate.   it was also way too soupy!!!!    i served it with bisquick complete cheddar-garlic biscuits.


21-Ingredient Chili Slow Cooker Recipe

adapted from a year of slow cooking

The Ingredients.
2 pounds boneless, skinless chicken thighs (cut in 1-inch chunks)
1 onion, diced
1 (15-ounce) can kidney beans, drained and rinsed
1 (15-ounce) can white cannellini beans, drained and rinsed
1 (15-ounce) can corn (drained and rinsed)
1 (15-ounce) can fire roasted tomatoes (whole can)
1 (4-ounce) can diced green chiles
1/2 cup spicy brown mustard
2 tablespoons soy sauce
2 tablespoons honey
3 tablespoons chili powder
1 tablespoon onion powder
1 tablespoon garlic powder
 1 teaspoon cayenne pepper
1 teaspoon oregano
1 teaspoon cumin
1/4 teaspoon cinnamon
1/4 teaspoon cloves
2 cups chicken broth
add salt to taste at the table, if needed
The Directions.
Use a 6-quart or larger slow cooker. Put the chicken into the bottom of your cooker; frozen is okay, but cut it into chunks. Add the diced onion, canned beans, tomatoes, chiles, corn, chilis and tomatoes. Now add the mustard, soy, honey, and dried spices. Carefully stir well to distribute spices the best you can. Pour in the chicken broth.
Cover and cook on low for 8 to 10 hours, or until chicken easily shreds with two large forks. Although you could cook this on high in 4 hours, the flavors will meld best when cooked low and slow. Stir very well and serve in a large bowl with your favorite chili toppings. We like shredded cheese and sour cream.

chicken fajita & white bean chili

theres a great new store around here – the savory spice shop.  The first time i went in there it was overwhelming – spices everywhere – every spice imaginable and some not imaginable!   i walked out with nothing.    the next time i had a little more time to wander around and sniff and examine the spices.   this is one of the recipes i found on that visit.  totally forgot to add the dallop of sour cream and some cilantro to my dish – it really needed it too!  next time i won’t forget!   i did use 2 cans of white beans to beef it up!   i also baked up some tj’s cornbread which is YUM-O!

Chicken Fajita & White Bean Chili

6 tbsp. Family Style Fajita Seasoning, divided
1 tsp. dehydrated minced garlic
1 cup chicken broth or stock
2 tbsp. olive or vegetable oil
1 1/2 lbs. of thickly sliced chicken breast
2 tbsp. apple cider vinegar
2 tbsp. lime juice, divided
2 15 oz cans petite diced tomatoes, drained
15 oz. can white beans, drained
One of our customers replaced the chicken with steak and won a local chili contest!Directions:
In a small bowl, thoroughly mix 4 tbsp. Family Style Fajita Seasoning and 1 tsp. dehydrated minced garlic into chicken broth and set aside. In a large sauce pan or Dutch oven, over medium high heat, lightly brown the sliced chicken in oil. After the chicken has browned on one side, turn and add cider vinegar and 1 tbsp. lime juice. When browned on second side, strain and reduce heat to medium. Stir in seasoned chicken broth and cook for 2-3 minutes. Add tomatoes, stir in remaining Family Style Fajita Seasoning and lime juice. Cook for 5-6 minutes, reduce to a simmer, stir in the white beans and simmer for 5-6 more minutes, stirring occasionally.

Serving Suggestions:
Serve with a dollop of sour cream and a sprinkle of freshly chopped cilantro.
