Time for a secret recipe club recipe! This month I was given thesaturdayeveningpot. There were so many recipes to choose from, but I finally settled on these lime squares. Friends invited us over for a bbq on the 4th and these seemed like a perfect dessert to bring.

I actually ended up making these twice because I forgot to take a picture at the BBQ! The first time I used a handheld pastry blender to cut the butter into the flour/sugar. It was really messy and hard to press the dough into the pan. The dessert came out fine, but the lime layer came out pretty Cakey and without much lime flavor! The bars were still devoured at the BBQ and we came home with an empty pan. The second time I used my food processor for the base and this time the dough was much easier to press in! I also used two limes instead of one for the lime layer for more lime flavor. I also left out the egg white on top of the base layer and didn’t notice a difference.

Ingredients:

BASE:
1 cup all-purpose flour
1/4 cup confecioner’s sugar
8 tablespoons (1 stick) unsalted butter, at room temperature, cut into 8 pieces
1 egg white for glazing
TOPPING:
2 large eggs, at room temperature
1 cup granulated sugar
2 tablespoons all-purpose flour
Zest of 1 lime
1/2 teaspoon baking soda
3 tablespoons fresh lime juice (1 lime)

Cooking Directions:
Preheat oven to 350 degrees.
Lightly grease 8 inch square baking dish with spray.
For the base, process flour and confectioner’s sugar in a food processor for several seconds. Add butter and process until dough comes together, 20 to 30 seconds.
Press the dough gently and evenly over the bottom of the prepared pan. Glaze with egg white, using basting brush.
Bake base on center oven rack until lightly golden, about 20 minutes. cool completely.
Meanwhile, prepare the topping: Gently whisk eggs in medium sized bowl until lightly mixed. Add the remaining topping ingredients and continue to whisk gently until they are blended.
Pour the topping evenly over cooled base. Bake until top is set and golden, about 20.
Allow to cool completely.

Coconut Loaf Cake with Lime Glaze – SRC

Time once again for a secret recipe club post! This month I was given holly from phemomenon. There were a ton of great recipes to choose from!!! I ended up picking this coconut loaf. I cooked it for about 55 minutes. I should have checked it sooner. It came out really good, but I should have checked it sooner. The edges were a little over done. It tastes really good warm! Yum!

Baked Chicken with Dijon and Lime

I took out chicken tenders for dinner and then had no plan. The one recipe I decided on, of course I was missing one mail ingredient! So I found this one. It was good. Not great. Good for a quick weeknight meal. I served them with couscous and green beans!

Baked Chicken with Dijon and Lime

Ingredients:
1 lb chicken tenders
3 tbsp Dijon mustard
1 tbsp light mayonnaise
1 clove garlic, crushed
1 lime, squeezed, and lime zest
3/4 tsp pepper
salt

Directions:
Preheat oven to 400°. place chicken in a large bowl and season generously with salt. In a small bowl combine Dijon, mayonnaise, lime juice, lime zest, garlic and pepper. Mix well. Pour over chicken, tossing well to coat.

Spray a large baking pan with a little Pam to prevent sticking. Place chicken to fit in a single layer. Bake until cooked through, about 30-35 minutes. Finish the chicken under the broiler until it is golden brown. Serve chicken with the pan juices drizzled over the top.

Chicken with Coconut-Lime Peanut Sauce

This recipe looked really promising! Chicken in a coconut lime peanut sauce? Yum! In reality it was just ok! I think it needs more than 1/2 cup of the coconut milk. Maybe the full can??

Chicken with Coconut-Lime Peanut Sauce

Ingredients
Sauce
1/2 cup light Coconut Milk
1/2 cup Peanut Butter
1 tablespoon Thai Red Curry Paste
Juice from 1 Lime (about 1 tbs lime juice)
1 tablespoon Soy Sauce
2 tablespoons Fish Sauce
2 teaspoons Toasted Sesame Oil
Pinch of the following:
Cracked Black Pepper
Cinnamon
Cayenne
Sugar to taste

Chicken
2 pounds Chicken Breast, cut into 1 inch pieces
1/2 cup diced Onion
a few Garlic Cloves, chopped
1 teaspoon Oil
1 cup cooked edamame pods

Optional Garnishes
Chopped Cilantro
chopped Peanuts
Green Onion
toasted unsweetened Coconut Flake
Srirach sauce

Method
Sauce
In a medium bowl whisk together the peanut butter, coconut milk, curry paste, lime juice, soy sauce, fish sauce, sesame oil, sUgar & seasonings to form a sauce. Taste and change anything if you want to. Set aside.

Chicken
Heat oil in a large sauté pan over medium high heat. Add onion & garlic cook until softened. Add chicken, cook until golden brown and cooked through about 10 minutes. Stir occasionally for even cooking. Stir sauce into chicken. Partially cover and simmer for about 5 minutes to let the flavors combine. Add edamame during the last few minutes of cook time. Serve with spicy Sriracha sauce and garnishes mentioned above.

Chicken with coconut lime peanut sauce

I had some chicken breasts defrosted and some coconut milk leftover from a dessert I made the previous day. This turned out really good! It could have used more than a pinch of cayenne pepper though! I served it over jasmine rice. Yum!

1 tablespoon Thai Red Curry Paste

2 tablespoons Fish Sauce
2 teaspoons Toasted Sesame Oil
Pinch of the following:

Asian chicken meatballs

These came together quick and tasted great yum! The dipping sauce is a must! I served these with tj’s confetti rice.

Asian chicken Meatballs With Lime Sesame Dipping Sauce

1/4 cup panko crumbs
1-1/4 lbs ground chicken
1 egg
1 tbsp ginger, minced
1 clove garlic, minced
1/2 tsp salt
1/4 cup chopped fresh cilantro
3 scallions, chopped
1 tbsp low sodium soy sauce
2 tsp sesame oil

Dipping Sauce
4 tbsp low sodium soy sauce
2 tsp sesame oil
2 tbsp fresh lime juice
2 tbsp water
1 chopped fresh scallion

Preheat oven to 500°F.
Mix ground chicken, panko, egg, salt, scallions, cilantro, 1 tbsp soy sauce, and 2 tsp oil and mix with your hands until combined well. Shape 1/4 cup meat mixture into a ball and transfer to a baking dish. Repeat with remaining mixture. Bake until cooked through, about 15 minutes.

For the dipping sauce mix together lime juice, water, soy sauce, and remaining 2 teaspoons of oil in a bowl. Add scallions.

Transfer meatballs to a serving dish. Stir sauce, then drizzle meatballs with 1 tablespoon sauce.

Serve meatballs with remaining sauce.
