creamy florentine chicken

i had a coupon for a free tub of the new philadelpha cooking cremes so i figured i’d try it out.  there were a bunch of recipes floating around for these new cremes.  i had all the ingredients for this one so that made the decision easy 🙂  you could easily substitute shrimp for the chicken!

What You Need

1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1/2 cup  halved red pepper strips (i used a whole red pepper)
1 pkg. (6 oz.) baby spinach leaves
1 tub  (10 oz.) PHILADELPHIA Savory Garlic Cooking Creme
2 cups hot cooked penne pasta  (i used a whole box of whole wheat penne)
2 Tbsp.  toasted pine nuts  (couldn’t find the pine nuts in the freezer, but it would have been delicious)

Make It

COOK chicken and peppers in large nonstick skillet on medium heat 5 to 6 min. or until chicken is done. Add spinach; cook and stir 2 to 3 min. or until wilted. Drain all but 1 Tbsp. liquid.

ADD cooking creme; cook and stir 3 min.

STIR in pasta; top with nuts.

    A very nice and affordable recipe, thanks for sharing! However, i may have to leave off the nuts, heh!

      Thanks for stopping by! I usually buy pine nuts in bulk at bjs or Costco it’s a little cheaper that way!
